Preheat your oven to 180°C (conventional and not fan forced!). In a small bowl combine ⅓ cup lemon juice, zest of 2 lemons, ⅔ cup maple syrup (or your fav liquid sweetener. Rice malt syrup will make it less sweet if that’s what you prefer!), ⅔ cup almond milk and 1 tsp vanilla extract. Whisk well.

200 grams of pasta

Fry the chopped garlic and onion in olive oil over medium heat for two minutes.
Add the tomatoes and stir for another two minutes.
Add salt, green pepper, coconut oil and coconut sugar to the sauce.
Add chopped basil and parsley.

To serve: your favourite pasta
Slice the tomatoes in halves. Place them on baking tray with the flesh facing upwards. Drizzle with the olive oil and sprinkle with salt and pepper. Place the tray in the oven and slow roast the tomatoes at 150 degrees Celsius for 35-40 minutes
